If you are hungry now, then wait till you check out the Facebook page of “Nuts Over Salads”, the new kid on the block who is making your “healthy eating” dreams come true. Aditya Rao who started this venture about four months back, brings to you “gourmet salads at affordable prices”…. And you thought such things did not exist?

After his degree in Culinary Arts from Australia and working there for a year, Aditya returned to Bangalore. Here, he worked at various places such as Olive Beach, Skyye and Tower Kitchen at UB City. Little did he know that a simple conversation with a friend would lead to this wonderful venture. “It happened overnight,” he tells us, “my friend who owns a gym was talking about how his gym members needed some healthy eating choices.” Aditya pondered over this and came back with the idea of providing them with salads. While this idea was tested on the gym members, Aditya also gave this option to some corporates… needless to say they loved it. The rest is history.

“Nuts Over Salads” gives you a new menu every Sunday for the week ahead. The backstage work is quite immense. It starts with Aditya visiting the market to see what is available for his salads, “for example,” he says, ”I went there today and they did not have rocket or baby spinach. I have to design this week’s menu accordingly.” Once the ingredients are decided, the salads are then planned such that each week has two vegetarian, two non-vegetarian and one all fruit salad. “We end the week with an all fruit salad, so typically Fridays are fruits day.” They also have a complete vegetarian option. “The salads are all designed such that there is an interesting mix and people get Asian salads, or Mexican salads or Mediterranean salads,” Aditya adds fondly, “premium salads at reasonable rates.” Needless to say all the salads are topped with nuts, hence the aptly chosen name “Nuts Over Salads”. Aditya also grows some of the herbs and the spinach. You can see images of his herb garden on the “Nuts Over Salads” Facebook page.

Delivery has been one of the biggest challenges for this venture. In the initial days Aditya not only made the salads, but also delivered them. “Now I have a team, and we deliver to areas such as MG Road, Koramangala, Richmond Town, Shanthi Nagar, HSR Layout and Indira Nagar.” Despite all the challenges, the venture is working hard to spread their distribution areas. “We would like to enter new areas, such as Jayanagar, JP Nagar etc.” They prefer to work on the subscription module, rather than open stores, “as this gives a lot more control over the supply and demand.” Their Facebook page stands witness to the many requests people make from different locations of Bangalore.

Biggest source of support? His mother Kavitha Rao, “she has been the most important part in terms of helping me in the kitchen and setting up things.”

Advice for future food entrepreneurs? “Be passionate about what you do. High motivation and great passion is what will get you through the tough phases.”

“Nuts Over Salads” is located at Richmond Town Bangalore. They deliver gourmet salads between 12 to 1 pm. You can choose to get salads on a weekly, or a monthly basis. Do call them up at 9901857922. Orders are taken one day prior.
